How we make it

  1. Peel the carrots.
  2. Put the cut-up chicken, carrots, celery, garlic, seasoning, salt and pepper in a pan and roast high, around 450, for about 40 minutes.
  3. Chop the herbs into a couple of mixes so everyone can season their own bowl.
  4. Take the chicken out. Set the breasts aside so they don't dry out.
  5. Put the roasted chicken, vegetables and pan juices into a stock pot with the broth and cook about 20 minutes.
  6. Take the meat off the bone, chop the breast meat, and add it back with the herbs toward the end.
  7. To serve, ladle the broth first (about three ladles each), then scoop in the vegetables and noodles.

Pointers from the show

  • Bone-in holds the flavor. Roast anything you can on the bone.
  • Pull the breasts early so they don't dry out.
  • Store-bought broth is the cheat.
  • Even better rested: chill it about four hours or overnight, then reheat. Let it cool down before it goes in the fridge.
  • DJ Price's only addition: hot sauce.

The story

About this recipe

Miguel's mom was a chef, but as a kid he wanted McDonald's. College in New Orleans, where food and music are everything, turned it into a love affair, though he didn't boil an egg until he left home. His “Cheating Gourmet” idea is all shortcuts: store-bought broth and roasting instead of hours of simmering, so the soup takes about two hours instead of four or five. The hosts gave him the show's golden spoon.
